Cherry Mousse Parfait*
List of Ingredients
1 # Can Dark, Sweet Cherries
1/4 C Brandy (Cherry, if possible)
Water
3 oz Pkg Cherry or Black Cherry Jell-O
1/2 C Heavy Cream, whipped
Recipe
Drain cherries, reserving juice. Cut cherries in half and marinate in brandy 1 hour. Add
water to cherry juice to make 1 1/2 C liquid. Heat to simmering, then remove from heat and
stir in Jell-O until it is dissolved.
Chill until Jell-O begins to set. Fold in whipped cream, cherries and brandy.
Chill until mousse begins to set.
Spoon into parfait glasses and chill at least 2 hours or until firm.
Serves 6 elegantly.
