    Low Fat Turkey Casserole

    4 slices of white bread
    1 C diced turkey
    1/2 C diced celery
    1/4 C diced onion
    1 8 oz can drained mushrooms
    2 beaten eggs or equivilent substitute
    1/2 C fat free mayonnaise
    1 C skim milk
    1/2 can low fat cream of mushroom soup

    Recipe



    Butter bread on both sides. Put two slices of bread in bottom of an 8" x 8" or 7" x 11" casserole dish. Mix celery, turkey, onions, and mushrooms and pour over bread. Top with remaining slices of bread. Mix eggs, mayonnaise, and add milk, pour over bread. Cover and refrigerate overnight. Before baking, spread soup over mixture. Bake at 325 degrees for 1 hour.
    Two generous servings.
