    Having been in the restaurant/private club business for years, I've learned their secrets for preparing perfectly cooked meats.

    List of Ingredients




    1 to 1 ½ " thick N.Y. Strip Steaks
    Kosher salt
    1 T Olive oil
    1 T Butter (preferrably clarified)

    Recipe



    1. Preheat skillet to 400F. Add olive oil and butter. Lightly sprinkle steak with Kosher salt.
    2. Sear the steaks until nicely browned, approximately 3-5 minutes.
    3. Turn the steaks, sear second side, then place in a 400F oven, on an oven-proof platter. Roast as follows:
    10 minutes for rare to medium- rare
    15 minutes for medium
    20 minutes for well done
