    Serve with scones and muffins, especially for afternoon tea. It is delicious as a filling for a yellow layer cake with chocolate frosting. You can also use lemon curd to make a sauce for chicken that tastes similar to Chinese Lemon Chicken.

    List of Ingredients




    3 eggs
    3/4 C sugar
    1 T grated lemon rind
    1/2 C fresh lemon juice
    2 T soft butter

    Recipe



    In microwave bowl, whisk together eggs and sugar. Whisk in lemon rind, lemon juice and butter. Microwave on HIGH for 2 minutes; whisk untilsmooth. Microwave on high for 2 to 3 minutes longer until it boils and thickens slightly; whisk again until smooth. Let cool, then refrigerate. (It will thicken a lot more as it chills) May be stored in covered jar in refrigerator for up to a week.
    Makes 1 1/2 cups
