    Chili Mix*

    List of Ingredients

    1 tb Unbleached Flour
    1 1/2 ts Chili Powder
1/2 ts Crushed Dried Red Pepper
    1/2 ts Sugar
    2 tb Instant Minced Onion
    1 ts Seasoned Salt
    1/2 ts Instant Minced Garlic
    1/2 ts Ground Cumin
    1/4 t Oregano
    1/4 t Garlic Powder

    Recipe

Combine all ingredients in a small bowl and blend well. Spoon mixture into a 6-inch square of aluminum foil and fold to make it airtight and label as Chili Seasoning Mix. Store in a cool, dry place and use within 6 months.
Makes about 1/4 cup of mix.
To make additional packages, increase ingredient amounts using the above recipe.

    To Make Chili:
Brown 1 lb ground Turkey (or Beef), 1 C Chopped Celery, 2 cloves Minced Garlic, 1 medium Chopped Onion, in a medium saucepan, over medium-high heat; drain, if necessary. Add 1 (16 oz) can Pinto (or Kidney Beans), 1 (16 oz) can Diced Tomatoes, 1/2 minced jalepeno pepper (add more if desired) and 1 pkg of Chili Seasoning Mix. Reduce heat and simmer 10 minutes, stirring occasionally.
    Makes 4 to 6 servings.
I brown the turkey in a small amount of bacon fat or I sometimes add 1-2 strips snipped bacon to the raw turkey. I almost always serve this with cooked elbow macaroni to make 'Chili Mac'.
I top each bowlful with grated Cheddar. Also, great served with a pan of piping hot cornbread.
A bowl of this will surely warm anyones bones.
