    Macaroni, Cheese and Tomatoes

    List of Ingredients

    1 28-oz can Tomatoes, cut up
    1 C Cheddar Cheese, Cubed
    2 T Olive Oil
    2 C Macaroni, Dry
    Salt and Pepper to taste


    Recipe

    Cook macaroni (such as elbows) in boiling, salted water until tender. Drain.
    Grease a large glass oven-proof casserole dish with olive oil.
    Mix the cheese and the tomatoes in the dish. When the macaroni is done, add it and mix well. Add salt and pepper to taste and mix well.
    Crumble some crackers over the top to keep the moisture in and dot with butter.
    Bake @ 350° for 20 minutes.
