    Ravioli w/Shrimp & Tomatoes

    List of Ingredients

    1 # Fresh or Frozen Cheese Ravioli
    3 T Olive Oil
    1 # Large Shrimp, shelled and deveined
    Salt
    1 Medium Onion, diced
    1 T Flour
    16 oz Can Tomatoes in Puree
    1 t Dried Basil
    3/4 C Half and Half
    Fresh Basil for garnish, opt.

    Recipe

    Prepare ravioli as package directs; drain and return to pot to keep warm.
    Meanwhile in a 5 qt dutch oven, over high heat, cook shrimp in olive oil with 1/2 t salt, stirring constantly until shrimp are pink and tender. Remove with slotted spoon to plate.
    In remaining oil, over medium heat, cook onion until tender. Stir in flour, cook 1 minute. Stir in tomatoes, basil and 1/2 t salt. Heat to boiling over high heat, stirring to break up tomatoes. Reduce heat and simmer 15 minutes.
    Gradually stir in half and half, then add shrimp; heat through.
    To serve:
    Add sauce to ravioli in saucepot; toss gently, then remove to platter. Garnish with basil, if desired.
    Serves 4 as a main dish.
    This is absolutely delicious! Fairly easy to prepare and definitely company fare. Serve with a crsip green vinaigrette salad and breadsticks.
