    1 large onion, chopped
    2 T butter
    1 # ground meat, (beef and/or pork)
    Salt and pepper to taste
    2 T tomato paste
    1 cube beef bouillon
    8 oz water
    1 # macaroni
    4 eggs, beaten
    4 T grated Parmesan cheese
    1 # pie crust

    Recipe



    Fry the onion in butter until golden brown. Add the minced meat, and then salt and pepper to taste. Stir and cook on low heat for 15 minutes. Add the tomato paste, the bouillon cube and water, then simmer on low heat 45 minutes. Boil macaroni until nicely al dente, but do not cook until the macaroni is soft, in order that it retain its shape inside the crust. Mix the meat mixture with the macaroni, adding in the beaten eggs and the grated cheese.
    Now roll out 3/4 of the pastry and line the sides of a 10-inch glass baking dish. Place the macaroni and meat mixture inside the dish, and cover with the remaining pastry. Bake in a 325 oven for 1 to 11/4 hours, taking it out when the pastry top is golden brown. Let cool at least 15 minutes, turn upside down onto platter and serve.
    Makes 8 servings.
    This is a wonderful rainy or snowy day project.
    Serve with a crisp salad.
