    Pizza Rustica

    List of Ingredients




    For dough:

    1 1/4 C milk, 110°
    Pinch sugar
    2 T yeast
    4 C flour
    1/2 t salt
    1 egg

    Proof milk, sugar and yeast. Stir in egg, then salt and add enough flour to make dough. Knead until smooth and springy. Cover and proof 25 minutes.
    Divide dough into 6 portions - or one large - and place on oiled baking sheets. For topping, mix together:

    8 medium or large tomatoes, peeled and chopped
    1 T garlic, minced
    1 C onion, chopped
    1/4 C olive oil
    3 oz pitted ripe olives, chopped
    2 t dried oregano
    4 oz grated Parmesan cheese

    Kosher salt to taste Spread dough with toppings. Bake until golden, about 20-25 minutes at 400°. (You may be able to cook at 425° if using a professional grade oven or pizza stone).
