    Farm Style Fried Chicken

    List of Ingredients




    1/2 C milk
    One 3- to 3 1/2-pound chicken, cut into 8 pieces
    1 C all-purpose flour
    2 t salt
    1 t black pepper
    1 t garlic powder
    1 t paprika
    3 C vegetable shortening or oil

    Recipe



    Place the milk in a large bowl. Add the chicken, coating completely. In another large bowl, combine the flour, salt, garlic powder, paprika and pepper; mix well. Remove the chicken from the milk and place in the flour mixture, coating completely.
    Meanwhile heat the shortening in a large deep skillet over medium heat until hot but not smoking. Carefully place the chicken in the skillet and cook, turning occasionally, for 20 to 22 minutes, or until the coating is brown and the chicken is no longer pink inside. Drain on a paper towel-lined platter. Serve immediately.
    Serves 3-4.
    I've used this same method to fry (domestic) squirrel and rabbit.
    A cream gravy serves nicely with this, along with smashed potatoes, of course.
