    My Greek Chicken*

    List of Ingredients

    1 Whole Chicken, washed and patted dry
    Olive Oil
    1 t Garlic Powder
    1 t Oregano
    1 Fresh Lemon, cut in half
    S & P to taste

    Recipe

    Salt cavity of bird. Rub entire Chicken with Olive Oil; season with Garlic Powder, Oregano and S & P. Place bird in roasting pan; truss, if desired. Squeeze Juice from half the Lemon all over the bird, then insert the rind into the Chicken.
    Roast @ 400 1 hour, basting with pan Juices occasionally.
    Midway through roasting time, squeeze remaining half Lemon over bird and discard rind.
    To serve, transfer bird to platter, cut string (if trussed), remove rind and pour pan Juices over bird.
    Great with Mashed Potatoes!
    Note:
    When my daughter grew up and moved away from home, this was the first recipe she called home to obtain.
