    Perfect Rice (Without a Rice Cooker)

    Instructions


    1. 1) Rinse the rice in cool water until the water runs clear. This removes all the excess rice dust from the rice, and will result in grains that don’t clump together. 2) Your ratio of water to rice is 2:1. That means that if you are cooking one cup of rice, you will need 2 cups of water. (As a side note, remember that one cup of cooked rice becomes two or more cups of cooked rice!) 3) Bring your water to a boil. (I like to add a pinch of salt in the water so I don’t have to add salt to my rice.)4) When the water is boiling, pour your rice into the water. Stir for about one minute while water continues to boil. 5) Turn heat to low and cover pot with a lid. Let cook on low for 20-30 minutes, depending on your type of rice. White, long grain rice, such as basmati, can be cooked for 25 minutes. Brown short-grain rice should be cooked at least 45 minutes. 6) DO NOT LIFT THE LID UNTIL YOUR COOKING TIME IS DONE! This is the key. The rice needs to steam inside the pot to soak up all the water. If you lift the lid continually, or stir while it’s cooking on low, your rice will never become light and fluffy, even when it’s cooked all the way. 7) When rice is done, fluff with fork and serve immediately.
