    Rice Salad

    List of Ingredients

    2 C raw white rice, cooked
    1 package Good Seasons Italian Dressing, made up
    1 medium bell pepper, finely diced (yellow is nice but green is fine)
    1 small onion, finely diced
    2 medium small tomatoes, finely diced
    2 stalks celery, finely diced
    2 T (approx) chopped parsley or cilantro


    Recipe

    Cook rice, chill, breaking up clumps. Add minced vegetables and dressing.
    Stir until well mixed. Serve chilled or at room temperature. Serves 8. This doubles or triples well.
