Cucumber Onion Salad

3 cucumbers
1 bunch green onion
1/2 C white vinegar
1/2 C sugar
1 T dillweed
1 T salt
1/2 t white pepper
Recipe
Peel (or not) cucumbers and slice thin, Slice green onions diagonally as
thinly as possible. Add to cucumbers. In a small bowl, mix vinegar, sugar,
dillweed, salt and pepper. Whisk with a fork until blended.
Pour over onions and cucumbers. Turn to coat all pieces. Marinate in a
plastic ziploc bag at least 8 hours or overnight, turning bag a few times.
To serve, drain off marinade.
Yield: 4 servings. For 8 servings, double the cucumbers, but use only 1 1/2
times the amounts for the marinade.
