    I think this would be refreshing on a hot summer evening served with grilled chicken or a thick, juicy steak.

    List of Ingredients




    4 Large Tomatoes, peeled, seeded, diced
    1 Large Cucumber, peeled, seeded, diced
    2 Medium green peppers, diced
    2 C Croutons
    1 small Red Onion, chopped
    1/3 C Red Wine Vinegar
    1/3 C Tomato Juice
    1/3 C Olive Oil
    Salt
    Pepper

    Recipe



    Arrange the tomatoes, cucumbers, bell peppers and croutons in separate sections of a large serving dish. Blend together the red onion, salt, pepper, vinegar, and tomato juice. Whisk in the olive oil. Spoon some of the dressing over the tomatoes, cucumber, and peppers in the serving dish. Serve some of the vegetables on individual plates with some sauce on the side. Sprinkle with croutons.
