Mom's Raw Mushroom Vinaigrette
List of Ingredients
1 lb fresh mushrooms
1/2 cup sliced green onions
1/2 cuo chopped fresh parsley
1/3 cup olive or vegetable oil
3 tbs. lemon juice
1 tsp. leaf basil, crumbled
1 tsp. salt
1/4 tsp. pepper
Recipe
Clean mushrooms and slice thinly lengthwise. Put in a medium size bowl. Sprinkle with green onions and parsley.
Combine oil, lemon juice, basil, salt and pepper in a small jar with a screw top, cover and shake.
Pour over mushrooms, toss gently, cover and refrigerate two hours or longer.
Makes about 6 servings.
