    I have never cared for creamy type cole slaw, but love cabbage. It took forever (well, almost) to come up with JUST the right amounts to perfect this recipe.

    List of Ingredients




    1 medium Cabbage, shredded
    1 t Salt
    1 C white Vinegar
    1/4 C Water
    2 C Sugar
    1 t Mustard Seed
    1 t Celery Seed
    Grated Carrot, opt.
    Diced Green Pepper, opt.

    Recipe



    Salt cabbage and allow to sit for 1 hour. Squeeze out all the water from the cabbage. Combine vinegar, water, sugar, mustard seed, and celery seed in an enamel saucepan and bring to boil. Let cool. Pour over cabbage (and carrots and peppers, if using). Refrigerate, then serve when well chilled.
    This also freezes well.
