    List of Ingredients





    2/3 loaf day old French or Italian Bread*
    2 cups diced (1/4 in.) seeded pared cucumbers
    1 yellow bell pepper, seeded, cut into 3/4 inch dice
    3/4 cup chopped red onion
    2 ripe medium large tomatoes, seeded, coarsely chopped, or
    12 oz. cherry tomatoes, halved
    1/2 cup chopped fresh parsley
    1/4 cup chopped fresh basil
    3/4 cup extra virgin olive oil
    1/3 cup balsamic or red wine vinegar
    Salt to taste
    1/2 tsp. freshly ground pepper

    Recipe




    Trim crust from bread and cut into 1 inch cubes (7 to 8 cups).
    Combine bread and all the veggies and spices except salt and
    pepper, in large serving bowl. Drizzle with oil and vinegar; toss
    to coat. Season with salt and pepper. Serve at once. *If day old
    bread is not available, trim crust from fresh bread, cut into 1
    1/2 inch ccubes, and dry on baking sheet in 350° oven for 10 to
    15 minutes.
