Portobella Salad
List of Ingredients
For each Serving:
2 Tbsp. olive oil
1 oz. red onion julienne
1/2 tsp garlic
1/2 tsp shallots
1 pinch Crushed red pepper flakes
1 Tbsp. balsamic vinegar
2 Tbsp. red wine
2 oz. roma tomatoes, chopped
1 Tbsp. basil pesto
2 Tbsp. butter
1 each grilled portobello mushrooms (or 2 small)
1/2 Tbsp. fresh basil
2 Tbsp. gorgonzola cheese
1/2 cup field greens
Recipe
1. Grill mushroom
2. Saute onion, garlic and shallots.
3. Add remaining ingredients, finish with butter.
4. To plate, place greens in center of plate. Top with mushroom. Top mushroom with sauce.
5. Sprinkle plate with gorgonzola cheese.
