    Potato Salad

    List of Ingredients




    5 # Idaho Potatoes
    1 # Bacon
    5 celery ribs
    1 bunch of green onions
    1 2 1/4 oz. can of sliced black olives
    1 C mayonnaise (more or less to your taste)
    Salt and pepper, to taste
    4 cloves of garlic, pressed

    Recipe



    Scrub potatoes and then boil until a large cooking fork will go right through the potato with no effort. Drain and cool. When cool, peel them and cut them up in cubes or chunks.
    Fry all the bacon, drain, crumble it and set aside. Finely chop the celery and green onion, set aside.
    Press the garlic cloves through a presser into a large bowl.
    With your fingers, swish the garlic all around the bowl covering the entire inside. Place the potatoes in the bowl then the crumbled bacon. Mix a bit then add the celery and the green onions and mix. Add the black olives and mayonnaise adding more if it still looks a bit dry. Add salt and pepper to taste.
    This serves at least 12 adults as a side dish....great at a cookout as well as a family dinner.
