    5 Minute Clam Sauce

    List of Ingredients




    1 can minced clams
    1-2 T extra virgin olive oil
    lotsa garlic, minced
    1 bunch scallions or 1 small white onion, chopped
    1 t each oregano, basil
    3/4 C dry white wine
    freshly grated parmesan and romano cheese
    1 T fresh parsley, chopped finely


    Recipe



    In small skillet, saute onion and garlic in olive oil till translucent.
    Add entire can of clams (with juice), basil, oregano, and wine.
    Simmer until heated through. Generally done in the time it takes to cook pasta. Sauce is supposed to be thin.
    Add parsley and cheese just before serving.
    Serve in soup plates.
