    Recipe Introduction

Finely chopped shrimp may be substituted in a pinch.

    List of Ingredients

    2 1/2 # cooked Conch Meat
1/2 # lean Salt Pork or Bacon, finely chopped
    2 Onions, sliced
    2-4 cloves Garlic, finely chopped
    4 C Water
4 ripe Tomatoes, cored and coarsely chopped
1 large Potato, peeled and cut into 1/2" dice
    1 T Long-grain Rice
    3 Bay (laurel) Leaves
Salt and freshly ground Pepper to taste
    A 13-oz can Evaporated Milk

    Recipe

Finely chop the conch meat with a meat grinder, food processor, or knife, and set aside.  Fry the salt pork in a large pot over moderate heat until it is browned, about 10 minutes.  Add the onions and garlic and saute until the onions are tender but not brown, about 10 minutes.
Stir in the conch meat and the remaining ingredients except the evaporated milk and bring to a boil over high heat.  Reduce the heat to low and simmer covered for 1 hour.  Stir in the evaporated milk and heat through. Do not boil.
    Serves 6 to 8.
