    Cream of Almond Soup

    List of Ingredients




    3 T Almond Paste
    2/3 C Finely Chopped Almonds
    2 Qts Chicken Broth
    3 Egg Yolks, slightly beaten
    2 C Whipping Cream
    1/2 t Sugar
    1/2 t Salt
    1/4 t Almond Extract

    Recipe



    Add almond paste and chopped almonds to broth. Cover and bring to a boil.
    Lower heat and simmer 30 minutes.
    Beat together egg yolks, cream, sugar and salt. Beat in a small amount of hot broth, then whisk mixture into remaining hot broth. Do not boil. Add extract.
    This is a delightfully different soup that may be served hot or chilled.
    Top with sliced almonds, if desired.
    Serves 8.
