    Quick Vichyssoise

    List of Ingredients


    1 1/2 pounds Potatoes -- peeled and sliced
    1/2 pound Onions -- thin sliced
    1/4 pound Leeks -- thin sliced
    1 Whole Bay Leaf
    White Pepper -- to taste
    1 Quart Chicken Stock, Weak

    1 Quart Light Cream -- cold
    Salt -- to taste

    Recipe

    Combine first group of ingredients and simmer until potatoes are done.
    Puree .Chill over ice water until ice cold. Whisk in Cream and Salt......Garnish with Chives.

    Serves 10

    One of my favorite soups.
