    Mockamole

    List of Ingredients




    1 avocado
    1 block silken tofu
    5 T lemon juice
    2 cloves garlic
    1/2 t salt
    Tabasco (to taste)
    2 T fresh parsley leaves ( do NOT use dried parsley)

    Recipe



    Remove the avocado pit. Scoop out the flesh and place in a blender or food processor. Crumble in tofu. Add the other ingredients and blend until smooth and creamy. If it is too thick (like library paste) add a tablespoon or 2 of water. Add more salt or hot sauce to taste. Store with plastic wrap lightly pressed onto the top of the mockamole to prevent discoloration, and it will last 2-3 days.
    Makes 2 cups.
