Artichokes Provençal
List of Ingredients
6 Smallish Globe Artichokes
1 Lemon, juiced
2 T Olive oil
1 Medium Onion, finely chopped
1 Sprig of fresh Thyme (or dried)
2 Bay (Laurel) leaves
1/8 t Kosher salt and ground black Pepper
1 C Dry white wine
Recipe
Remove tough outer leaves of artichoke and trim tips. Cut each artichoke in half vertically; remove the choke (fuzzy center). Immediately drop cut artichokes into a bowl of water with lemon juice.
Heat olive oil in a large frying pan over low heat. Add onion and saute until translucent. Add drained artichokes, herbs, salt, pepper and wine. Cook, covered for 45 minutes or until tender, stirring occasionally.
Serve warm or at room temperature.
Nice company fare.
