Mom's Mushroom Pie

List of Ingredients

1 # Mushrooms
1/4 C butter
3 scallions, including green part, finely chopped
3 T flour
1 C heavy cream
1/2 C chicken broth
salt and pepper to taste
2 t lemon juice
2 T chopped parsley
Pastry made from 1 cup flour



Recipe

Wipe mushrooms; slice them; saute in butter in heavy skillet. Add scallions and cook 2 minutes longer.

Sprinkle with flour and gradually stir in the cream and broth. Season with salt and pepper. Bring to a boil and simmer until mixture thickens. Stir in the lemon juice and parsley and pour into a 9 inch deep dish pie plate. Top with rolled out pastry,

Bake in 425 degree oven until pastry is golden, about 30 minutes.
