    Scalloped Tomatoes & Artichoke Hearts

    List of Ingredients

    2 1/2 slices White Bread, trimmed & cubed
    1 - 28 oz. can Italian Plum Tomatoes, undrained
    2 - 10 oz. pkg Frozen Artichoke Hearts, quartered
    1/2 C Onion, finely chopped
    1 T Flour
    1 t Salt
    1/8 t Dried Thyme
    1/4 C Butter
    1 t Dijon Mustard
    1/2 t Dried Basil
    1/4 t Pepper
    2 slices White Bread, buttered & cubed
    2/3 C Parmesan Cheese


    Recipe

    Combine Tomatoes, Artichoke Hearts & Onion with dried Bread cubes. Melt Butter, add Flour, Basil, Mustard, Thyme, Salt & Pepper. Stir. Add tomato mixture - stir to combine. Pour into prepared baking dish. Can be prepared 1 day ahead. Sprinkle with Buttered Bread Cubes, top with Parmesan.
    Bake at 400* for 30 minutes.
