    Southern Style Greens

    List of Ingredients




    3 qts. water
    1/4 lb. salt pork, ham hock or smoked turkey wing
    2 lbs. fresh greens
    2 tsps. kosher salt
    1/2 tsp. dried red pepper flakes
    Trimmed green onions or sliced white onion

    Recipe



    In a large pot with a lid, bring the water and seasoning meat to boil. Reduce the heat to medium, cover and simmer for about 30 minutes while you prepare the greens for cooking.
    Rinse the greens thoroughly and remove the stems. Trim the rough ends from the stems and chop them into 1/2-inch long pieces. Set aside.
    3. Tear the leaves into pieces about 2 to 3 inches wide.
    Add the salt and pepper flakes to the boiling water. Add the stems and cook, covered, at a lively simmer, for 15 minutes.
    Add the greens, using a wooden spoon to push them down into the simmering water. You will probably have to add the greens in 2 or 3 batches, letting each batch cook down a bit to make room for the next one.
    When all the greens are in, cover the pot, and simmer for 1 to 2 hours, until the greens are meltingly tender. Serve hot, with trimmed green onions or sliced white onion passed on the side.
    Serves 4 to 6.
