    Stuffed Artichokes

    List of Ingredients




    2-3 C plain breadcrumb
    1/2 C olive oil
    1-2 t garlic, finely minced
    1/3 C grated romano cheese
    1/2 C green olives, chopped (no pimento)
    salt
    1 lemon

    Recipe



    Mix breadcrumb, olive oil, garlic, cheese, and olives together.
    This should be sufficient to moisten breadcrumb, but not make it pasty. Cut top and stem off artichokes (stem may be peeled and boiled with artichokes) wash artichokes, then, with cut side down, hit on hard surface to open. Sprinkle inside of artichoke with salt. Stuff artichokes with breadcrumb mixture, pushing deep into leaves.
    Place in pot with about 1-1 1/2 inches of water. Cut
    lemon in half & squeeze over artichokes, place squeezed lemons in water with artichokes (add stems if being cooked) Drizzle olive oil over artichokes, cover pot. Bring to a boil, cook on low for approximately 60 min. or until leaf can easily be pulled out.
    Cooking water can be spooned over artichoke when served if a
    moister stuffing is desired. You may find after doing this, you may want to adjust the amount of garlic, cheese, olives, salt, to suit your individual tastes.
