    Super Easy Eggnog Pound Cake

    My son Jonathan just loves eggnog, so this is for him.

    List of Ingredients




    3 eggs, beaten
    1 teaspoon McCormick's rum flavoring
    3/4 teaspoon ground nutmeg
    1-1/2 cups commercial egg nog (I used Borden's in the can.)
    1 box yellow cake mix (pudding in the mix is okay)

    Recipe



    Combine eggs, rum flavoring, nutmeg, and egg nog. Add cake mix and blend on low speed until moistened. Beat on medium speed for 3 minutes. Pour into a Pam-sprayed Bundt pan or tube pan. Bake at 350° until golden brown, about 50 to 55 minutes, or until a toothpick inserted in the center comes out clean. You also may test by touching the top lightly with your fingertips. If it springs back, it is done. If you have a dark pan, you may need to reduce the oven temperature a little to avoid over-browing the sides. Remove from pan and cool on a rack.
    NOTE: If an icing is desired, melt 1/2 can of commercial icing (I like White Chocolate Almond) in the microwave oven for about 10 to 15 seconds, just enough to soften it so it will pour but not be too runny. Drizzle over the completely cooled cake. The icing will harden as it cools.
