Pecan Fruit Salad

Recipe Introduction
This is so quick and tasty, I'm sure it will become a family standard.
Serves 8 (3/4 cup)
List of Ingredients
- 1 cup pineapple chunks, packed in its own juice, drained (reserve juice)
- 1 medium banana, diced
- 2 small apples, cored and diced
- 1 cup canned mandarin oranges, rinsed and drained
- 1 oz chopped pecans (1/4 cup)
- 1 (6 serving) pkg sugar free instant vanilla pudding
Instructions
- In medium bowl, combine pineapple, banana, apples, mandarin oranges and pecans. Add enough water to reserved pineapple juice to make 1 1/2 cups liquid. Pour into medium bowl; add dry pudding mix. Mix well with a wire whisk. Stir into fruit. Mix gently to combine.
