    Cheesy Chili Meat Loaf

    Recipe Introduction


    Meatloaf is one of my favorite comfort foods - and this is one of my current favorite meatloafs!
    Serves 6


    List of Ingredients


    • 1/2 cup finely chopped onion
    • 1/2 cup finely chopped green bell pepper
    • 2 tablespoons water
    • 16 ounces extra-lean ground sirloin beef or turkey breast
    • 1/2 cup plus 1 tablespoon (2 1/4 ounces) shredded Kraft reduced-fat Chedder cheese
    • 3 slices reduced-calorie white bread, made into soft crumbs
    • 1 teaspoon JO's Chili Seasoning or any chili seasoning
    • 1 (8-ounce) can Hunt's Tomato Sauce*
    • 1 tablespoon Splenda Granular
    • 1 teaspoon dried parsley flakes


    Instructions


    1. In a small microwavable bowl, combine onion, green pepper, and water. Cover and microwave on HIGH (100% power) for 2 minutes. Drain. In a large bowl, combine meat, Chedder cheese, bread crumbs, JO's Chili Seasoning, 1/3 cup tomato sauce, and drained vegetables. Pat mixture into a microwavable baking ring. Microwave on HIGH for 8 minutes. Stir Splenda and parsley flakes into remaining 2/3 cup tomato sauce. Spoon sauce mixture evenly over top. Continue to microwave on HIGH for 2 minutes. Let set for 5 minutes. Cut into 6 servings.
