    List of Ingredients


    • 1 (4-serving) package JELL-O Sugar Free Instant Vanilla Pudding Mix
    • 1 1/2 cups skim milk
    • 1/4 cup raisins
    • 1 cup unsweetened applesauce
    • 1/4 cup Cool Whip Lite
    • 2 cups cold cooked rice
    • 1/2 teaspoon ground cinnamon


    Instructions


    1. In a large bowl, combine dry pudding mix and skim milk. Mix well using a wire whisk. Stir in raisins and applesauce. Blend in Cool Whip Lite. Add rice and cinnamon. Mix well to combine. Evenly spoon mixture into 6 dessert dishes. Refrigerate at least 30 minutes.


    Final Comments


    HINT:
    1) To plump up raisins without "cooking", place in a glass measuring cup and microwave on HIGH for 20 seconds.
    2) 1 1/3 cups uncooked rice usually cooks to about 2 cups.
