    Recipe Introduction


    My husband, Cliff, said this was good enough to serve to royalty! I'm not planning on inviting Her Majesty the Queen of England over for supper anytime soon, but it's good to know I've got the perfect dessert should her Rolls-Royce break down in DeWitt.
    Serves 8


    List of Ingredients


    • 2 (4-serving) packages JELL-O sugar-free vanilla cook-and-serve pudding mix
    • 1 1/3 cups Carnation Nonfat Dry Milk Powder
    • 2 cups water
    • 3/4 cups Land O Lakes no-fat sour cream
    • 3/4 cup seedless raisins
    • 1 teaspoon ground cinnamon
    • 1 (6-ounce) Keebler graham cracker pie crust
    • 2 tablespoons purchased graham cracker crumbs or 2 (2 1/2-inch) graham cracker squares, made into crumbs
    • 1 tablespoon Splenda Granular
    • 1/2 Cool Whip Lite


    Instructions


    1. In an 8-cup microwave-safe mixing bowl, combine dry pudding mix, dry milk powder, and water. Cover and microwave on HIGH (100% power) for 5 minutes or until mixture starts to boil, stirring after 3 minutes. Add sour cream. Mix well to combine. Re-cover and microwave on HIGH for 30 seconds. Stir in raisins and cinnamon. Place bowl on counter, uncover, and let set for 10 minutes, stirring occasionally. Evenly spread mixture into pie crust. In a small bowl, combine graham cracker crumbs and Splenda. Evenly sprinkle crumb mixture over top of filling. Refrigerate for at least 1 hour. Cut into 8 servings. When serving, top each with 1 tablespoon Cool Whip Lite.

    HINT: A self-seal sandwich bag works great for crushing graham crackers.
