    Recipe Introduction


    Serves 6 (3/4 cup)
    *Freezes Well


    List of Ingredients


    • 1 1/2 cups (9 ounces) diced Dubuque 97% fat-free ham or any extra-lean ham
    • 1/4 cup finely chopped onion
    • 1/2 cup finely chopped celery
    • 2 cups fresh or frozen whole-kernel corn, thawed
    • 1 1/2 cups (8 ounces) diced cooked potatoes
    • 1 (10 3/4-ounce) can Healthy Request Cream of Mushroom Soup
    • 1/2 cup skim milk
    • 2 teaspoons dried parsley flakes


    Instructions


    1. In a large skillet sprayed with butter-flavored cooking spray, saute ham, onion, and celery until browned, stirring often. Add corn and potatoes. Mix well to combine. Stir in mushroom soup, skim milk, and parsley flakes. Lower heat and simmer for 5 minutes, stirring occasionally.

    HINT: Thaw corn by placing in a colander and rinsing under hot water for one minute.
