    "Cool As A Cucumber" Shrimp Salad

    Recipe Introduction


    Serves 4 (1 full cup)


    List of Ingredients


    • 2 (4.5 ounce drained weight) cans small shrimp, rinsed and drained
    • 2 cups frozen whole-kernel corn, thawed
    • 2 cupes diced unpeeled cucumbers
    • 1/3 cup Kraft Fat Free Ranch Dressing
    • 2 tablespoons Kraft fat-free mayonnaise
    • 1 teaspoon dried parsley flakes


    Instructions


    1. In a medium bowl, combine shrimp, corn, and cucumbers. In a small bowl, combine Ranch dressing, mayonnaise, and parsley flakes. Add dressing mixture to shrimp mixture. Mix gently to combine. Cover and refrigerate for at least 30 minutes. Gently stir again just before serving.


    Final Comments


    HINT: Thaw corn by placing in a colander and rinsing under hot water for one minute.
