    Recipe Introduction


    Pile those layers high, and you'll feel as if you're dining on a cloud! I always have fat-free cream cheese, fat-free yogurt, graham crackers, and frozen strawberries in the house (and you should, too), so I think of this recipe as one of my "old reliables"-ready in minutes, prepared from ingredients on hand, and yes, definately delicious!
    Serves 8


    List of Ingredients


    • 12 (2 1/2-inch) graham cracker squares*
    • 1 (8-ounce) package Philadelphia fat-free cream cheese
    • 3/4 cup Yoplat plain fat-free yogurt
    • 1/3 cup Carnation Nonfat Dry Milk Powder
    • 1 teaspoon coconut extract
    • 1/4 cup Splenda
    • 2 (4-serving) packages JELL-O sugar-free strawberry gelatin*
    • 1 cup boiling water
    • 2 cups frozen unsweetened strawberries
    • 2 tablespoons flaked coconut


    Instructions


    1. Place 9 graham crackers in a 9-by-9-inch cake pan, breaking as necesary to fit. In a medium bowl, stir cream cheese with a spoon until soft. Add yogurt, dry milk powder, coconut extract, and Splenda. Mix gently to combine. Fold in 1 package dry gelatin. Spread mixture evenly over graham crackers. Refrigerate. Meanwhile, in a medium bowl, combine remaining package of dry gelatin and boiling water. Mix well to dissolve gelatin. Add frozen strawberries. Mix well to combine. Refrigerate for 10 minutes. Evenly spoon strawberry mixture over cream cheese mixture. Crush remaining 3 graham cracker squares. Evenly sprinkle graham cracker crumbs and coconut over top. Cover and refrigerate for at least 2 hours. Cut into 8 servings.
