How can andy day be less than glorious when you've got these moist scrumptious ways to greet the dawn? Even if you've got no fresh fruit in the house, that bag of apricots in your cabinet means muffins for breakfast!
Serves 8
List of Ingredients
- 1 cup self-rising flour
- 3 tablespoons Splenda
- 1/2 cup skim milk
- 2 tablespoons Kraft fat-free mayonnaise
- 1 teaspoon vanilla extract
- 2/3 cup (3 ounces) chopped dried apricots
Instructions
- Preheat oven to 425 degrees. Spray 8 wells of a 12-hole muffin pan with butter-flavored cooking spray or line with paper liners. In a large bowl, combine flour and Splenda. Add skim milk, mayonnaise, and vanilla extract. Mix well to combine. Fold in apricots. Fill prepared muffin wells 1/2 full. Bake for 10 to 12 minutes or until toothpick inserted in center comes out clean. Lightly spray tops of muffins with butter-flavored cooking spray. Place muffin pan on a wire rack and let set for 5 minutes. Remove muffins from pan and continue cooling on rack.
Final Comments
HINT: If you don't have self-rising flour, use 1 cup regular all-purpose flour, 1/2 teaspoon salt, and 1 1/2 teaspoons baking powder.
