Recipe Introduction
What better way to start the a crisp fall day, then to pumpkin pie flavored harvest pancakes! Warm your belly, and your heart at the same time, as these cakes are healthy! Low calorie, high fiber, and delicious!
Serves 3 (3 pancakes each)
List of Ingredients
- 1 egg white
- 1 1/3 cups Light Soy Milk
- 3/4 cup canned pumpkin puree
- 1 teaspoon Jo's pumpkin pie spice
- 1 cup Heart Smart Bisquick
Instructions
- In a medium bowl, use a fork or wire whisk to combine egg white, milk, pumpkin and spice. Add baking mix. Mix gently to combine. Using a 1/4 cup measure as a guide, pour batter on large hot skillet or griddle sprayed with butter-flavored cooking spray. Brown pancakes on both sides. Should make 9 pancakes.
