    Recipe Introduction


    So easy, yet so elegant. The delicate flavor of lemon plays wonderfully against the fruit cocktail.
    Serves 6 (2/3 cup)


    List of Ingredients


    • 1 (4-serving) package Jell-O sugar-free instant vanilla pudding mix
    • 1 (4-serving) package Jell-O sugar-free lemon gelatin
    • 2/3 cup Carnation nonfat dry milk powder
    • 1 1/4 cups water
    • 2 cups (one 16-ounce can) fruit cocktail, packed in fruit juice, drained (reserve liquid)
    • 3/4 cup Cool Whip
    • 1/2 cup (1 ounce) miniature marshmallows


    Instructions


    1. In a medium bowl, combine dry pudding mix, dry gelatin, and dry milk powder. Add water and reserved fruit cocktail liquid to dry pudding mixture. Mix well using a wire whisk. Blend in Cool Whip Lite, fruit cocktail, and miniature marshmallows. Cover and refrigerate for at least 30 minutes.
