Curried Chicken and Fruit Salad

Recipe Introduction
This salad is perfect for an elegant lunch or supper.
Serves 4
List of Ingredients
- 8 ounces, skinned chicken breast
- 2 tablespoons sweet n' sour sauce
- 2 teaspoons curry powder
- 1/4 teaspoon cumin
- 1/2 cup sour cream
- Romaine lettuce leaves, washed, died and chilled
- 1 orange, pelled and segmented
- 1 kiwifruit, pelled and sliced in rings
- 1 tablespoon chopped fresh mint
Instructions
- Tear cooled chicken into bite size pieces.
- In large bowl combine sauce, curry powder, cumin and sour cream to make dressing.
- Stir chicken into dressing and chill.
- Line platter with lettuce leaves and arrange chicken mixture over top.
- Arrange fruit around chicken.
- Sprinkle mint over all.
Final Comments
NOTE: 1 tablespoons sweet n' sour sauce = 1 fruit card. You can usually find in the oriental section of the supermarket. Yes, you can have sour cream! 2 tablespoons = 1 fat card. You see, it isn't a matter of giving up all the goodies, it is simply a matter of PORTION PATROL.
