    So you thought pancakes would be one of those "I can't have any more" foods. Wrong! There really is no such list of forbidden foods. Once you have mastered PORTION PATROL, you can eat anything. Well, almost anything.
    Makes 2 servings


    List of Ingredients


    • 1 cup grated raw carrot
    • 2 slices whole wheat bread, crumbled
    • 12 walnut halves, finely chopped or ground
    • 1/2 cup grated raw onion
    • 1/2 cup grated zucchini
    • 1 egg plus, 1 egg white, lightly beaten
    • 1 ounce (1/4 cup) shredded low-fat mozzarella cheese
    • Salt and pepper to taste
    • 1/2 cup unsweetened apple sauce


    Instructions


    1. In medium bowl combine carrot, bread crumbs, ground walnuts, onion and zucchini.
    2. Add egg, cheese, salt and pepper to taste.
    3. Divide into 8 balls and flatten to form pancakes.
    4. Heat a large skillet coated with non-stick spray. Cook pancakes over medium heat, about 6 minutes, turning to brown both sides.
    5. Arrange on serving platter with apple sauce on side.


    Final Comments


    Egg whites alone have no fat and few calories, so an extra one now and again can be regarded as a freebie. HOWEVER, if you ever use 3 egg whites for 1 serving you must count 1 meat card.
