    Recipe Introduction


    They say eating oat bran and prunes gives your day a regular start. So eating a muffin for breakfast will be food for your stomach and heart.
    Makes 16 servings (1 each)


    List of Ingredients


    • 1 medium orange
    • 1/3 cup orange juice
    • 1/4 cup vegtable oil
    • 1 egg
    • 1 1/2 cups self-rising flour
    • 1 cup oat bran
    • 9 tablespoons (1/2 cup plus 1 table spoon) light brown sugar
    • 10 pitted prunes, chopped
    • 24 pecan haves
    • 1/2 teaspoon cinnamon


    Instructions


    1. Grate rind from orange. (Orange colored part only.) Reserve.
    2. Peel orange and chop coarsely.
    3. In food processor or blender, combine chopped orange with orange juice, oil and egg. Process until smooth.
    4. In medium bowl sift flour. Add bran.
    5. Set aside 2 tablespoons bown sugar and add remaining sugar to dry ingredients together with prunes and reserved orange rind.
    6. Set aside 16 pecan halves. Chop remaining 8 and add to dry ingredients. Mix thoroughly.
    7. Add orange mixture to dry ingredients and mix quickly and lightly until ingredients are just moistened.
    8. Divide muffin mixture among 16 paper muffin pan liners coated with non stick spray.
    9. Mix reserved 2 tablspoons sugar with cinnamon and sprinkle over muffines. Place a pecan half on top of each muffin.
    10. Microwave muffins, 4 at a time, on HIGH (100% power) 1 miute and 20 seconds.
    11. Let muffins cool serveral minutes.


    Final Comments


    Note: Microwave-proof muffin pans are readily and inexpensively available wherever microwave accessories are sold. If you don't have one, just use four of the paper muffin pan liners together. They'll work just fine.
