Cinnamon Pie

Here's a favorite recipe in our family. My great-grandma made this recipe up
for something she could make her children that didn't cost much. You have to
love cinnamon, which I do!! It's a very simple pie to make! Oh yeah, keep
the Tums handy! LOL Submitted by Cheryl
CINNAMON PIE
6 egg yolks
2 1/4 c. sugar
6 c. water
6 tsp. cinnamon
1 c. flour
dash of salt
Prebaked pie shell
Combine dry ingredients in a large pan. Add about 1/3 cup of the water, mix
well. Add rest of water and slightly beaten egg yolks. Cook over medium
heat, stirring constantly. Cook until thick, I usually let mine boil a few
minutes. Remove from heat and cool for about 10 minutes, stirring
occasionally. Pour into prebaked pie shells. This should make 2 pies or 3 if
you want to stretch it!
