    Brown Soda Bread

    Source of Recipe

    Joyce

    List of Ingredients

8 cups of Wholemeal Flour mixed with white flour
(proportions may vary according to taste)
    2 teaspoons Salt
    2 teaspoons Baking Soda
    3 cups Buttermilk

    Recipe

Mix all dry ingredients together. Make a well in the center and pour in half the buttermilk. Carefully mix in the dry ingredients, adding enough buttermilk to make a soft dough. (You may need more or less than three cups) Gently and quickly combine the bread. Turn the dough out onto a floured surface. Divide into two loaves and quickly shape each loaf into a circle. Place each loaf into a 7-inch greased pie plate, and cut a deep cross on the top with a knife. Bake at 450F degrees for 15 minutes. Reduce heat to 400 and bake for an additional 25 minutes, or until the bread is done. The bread should be lightly browned and sound hollow when tapped on the bottom. Turn out onto a rack when cool.
    Variations:
For white soda bread the directions are the same, but use white flour only. For Spotted Dick use the same ingredients, but add sultanas and currants. For Soda Bread With Bacon you may place several slices of bacon in a criss-cross pattern on top of the bread before putting in the oven.

    Makes 2 loaves.
