    Honey Oatmeal Bread

    This is my all-time favorite bread recipe!! It has never failed me. The instructions are written for a Kitchen Aide mixer because I got the recipe form the cookbook that came with my mixer.



    List of Ingredients


    • 1 1/2 cups water
    • 1/2 cup honey or real maple syrup
    • 1/3 cup butter or oleo
    • 5 1/2-6 1/2 cups all-purpose flour
    • 1 cup quick cooking oats
    • 2 teaspoons salt
    • 2 packages (or 2 tablespoons) active dry yeast
    • 2 eggs
    • 1 egg white
    • Oatmeal


    Instructions


    1. Combine water, honey, and butter in small saucepan. Heat over low heat until liquids are very warm. (120 degrees to 130 degrees)
    2. Place 5 cups of flour, oats, salt, and yeast in bowl.
    3. Attach bowl and dough hook. Turn to Speed 2 and mix 15 seconds.
    4. Gradually add warm liquids to flour mixture, about 1 minute.
    5. Add eggs and mix an additional minute.
    6. Continuing on Speed 2, add remaining flour, 1/2 cup at a time, until dough clings to hook and cleans sides of bowl. Knead on Speed 2 for 2 minutes longer.
    7. Place in a greased bowl, turning to grease top. Cover, let rise in warm place, free from draft until doubled in bulk, about 1 hour.
    8. Punch dough down and divide in half.
    9. Shape each half into a loaf and place in a greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan.
    10. Cover; let rise in warm place, free from drafts, until doubled in bulk, about 1 hour.

    11. Combine water and egg white. Brush tops of loaves with mixture. Sprinkle with oatmeal.
    12. Bake at 375 degrees for 40 minutes.
    13. Remove from pans immediately and cool on wire racks.
    14. YIELD: 2 loaves.


    Final Comments


    I don't usually do the egg white/oatmeal mixture in the last step. I do however rub the loaves with butter when they come from the oven before placing on the cooling racks. Mmmmmmmmmmmmmm.............
