    You'll need a pizzelle iron to make these wonderful, crispy Christmas cookies from Italy.

    List of Ingredients




    4 sticks softened butter
    2 c sugar
    12 eggs
    2 heaping Tbls. baking powder
    7 c. flour
    1 tsp. anise oil(if using extract use 2-3 Tbls.) or to taste

    Recipe



    Cream butter and sugar. Add eggs and beat well; add baking powder and start adding flour until you have a stiff batter. Pre-heat pizzelle iron. Put a rounded tsp. of batter on hot pizzelle iron and cook until light brwon. Use a fork to remove from the iron and lay on a FLAT surface until cool (2-4 minutes). After cooling well, they may be stacked.

    Notes:
    -Other flavors may be used, but the authentic Italian flavor is anise.
    -For very thin, lacy and brittle pizzelles, melt the butter before mixing with other ingredients. The batter will much thinner and as a resutlt it will spread more on the iron.
