    Southern Pecan Rice

    This is a wonderful combination and leans toward "Cajun" style rice.

    6 to 8 servings

    List of Ingredients




    1 stick butter or margarine (we used butter)
    1 cup onion, chopped
    1/3 cup red bell pepper, cut in thin stripes (we did bite size)
    1/3 cup green bell pepper, cut in stripes
    1/3 cup yellow bell pepper, cut in stripes
    2 tablespoons minced garlic
    2 tablespoons chopped parsley, fresh is best (we used dried)
    2 tablespoons chopped fresh basil or 1 tablespoon ground basil (we used dried)
    1 teaspoon salt
    1/2 teaspoon black pepper
    6 drops Louisiana hot sauce (we used more)
    1 cup pecan halves
    3 cups cooked rice (I prefer brown or wild rice and plan to try them in combination)
    1/4 cup chopped green onions, for garnish



    Recipe



    In medium- size saucepan, heat butter on high until melted. Add onion, bell peppers, garlic, parsley and basil, sautéing until onion starts browning. Add salt, pepper, hot sauce and pecans, stirring well. Sauté on high another 5 minutes, stirring often. Add rice, stirring well, until well blended. Remove from heat, place in serving bowl and sprinkle top with green onions to garnish.

    Noe: We added soy sauce and garlic salt. Hope you enjoy!
