LEMON & CARROT JAM
4 Lge Lemons 500g Carrots 2Kg Sugar 2 ¼L Water
Recipe
Slice the lemons thinly. Remove the pips But reserve them. Tie in muslin bag. Peel & grate the carrots. Place the lemons, carrots, pips & water in a bowl & let stand overnight. Bring to the boil & simmer until the lemon is soft. Raise the heat, add the sugar & when the sugar has dissolved & the jam is at a quick boil, boil until jelled. Cool & bottle.
